Pav Bhaji

Ingredients

For Red chilly paste

Dried Kashmiri Red chilly  5-6 pieces

Water as required

Oil  1/2 Tspn

For Pav Bhaji

Amul Butter 3 Tbspn + 2 Tbspn

Cumin seeds 1 Tspn

Capsicum chopped  2 Tbspn

Tomatoes chopped 11/2 cup

Dried green peas

soaked and cooked 3 Tbspn

Grated Boiled potatoes 1Cup

Kashmiri Red chilly paste 5 Tbspn

Garlic paste 21/2 Tbspn

Pav Bhaji masala 1Tbspn

Kasuri methi 1 Tbspn + 1/2 Tspn

Chopped Green coriander 2Tbspn + 1Tbspn

Chopped onions 3-4 Tbspn for serving

Lemon wedges 4-5  for serving

Salt as per taste

Water 1-2 cups

Method

Wash Kashmiri red chillies in water 2-3 times by removing stems , cook with sufficient water with oil,  cool and grind to fine paste.

In a flat bottom fry pan with 1  inch high borders  heat 2 Tbspn butter,  add cumin seeds , saute for 30 seconds,  add chopped capsicum,  stir fry till soft , now add chopped tomatoes and salt , fry till tomatoes are mushy  now add 1  cup water and boiled peas, mix well and start mashing with pav bhaji masher , keep in stirring in between , add another 1/2 cup water mix well and add grated boiled potatoes,  and mash again till almost smooth , remove in another pot, in same pan add 1 Tbspn butter,  add red chilly paste, garlic paste,  pav bhaji masala, Chopped green coriander cook till raw Smell goes out (add little water if required) , now add mashed veggies mixture,  mix well and mash again till paste Like consistency,  add salt if required,  add kasuri methi , and butter mix well,  mash again,  till smooth , keep aside hot

In a griddle add butter little red chilli paste , pav bhaji masala and green coriander mix well , now fry the slitted pav on that mixture , flip the pav , add some more butter,  fry pav again and served with prepared hot bhaji topped with dollop of butter,  green coriander ,  accompanied with chopped onions and lemon wedges
